Farm to School Tomato Cucumber Salad Recipe card (serving size: 4 - 1/2 servings) 

Tomatoes are high in vitamin A and vitamin C, a good source of potassium, and rich in lycopene, a powerful antioxidant that promotes heart health and helps keep the immune system healthy.

Cucumbers are also a good source of vitamin C and have a high water content as well, which helps replenish fluids and minerals. 

Today we are sharing a quick and easy Tomato Cucumber Salad recipe that even kids can make, with a little help from their adults at home. We hope you enjoy this simple and nutritious snack or side dish!

Ingredients:

  • 5 ounces Cherry Tomatoes (halved)
  • 6 1/2 ounces Cucumber (diced)
  • 1/8 tsp salt
  • 1/8 tsp black pepper
  • 1 3/4 tsp olive oil
  • 1 tsp red wine vinegar 
  • Pinch of dry dill 

Instructions:

  1. Wash cherry tomatoes and cucumbers. 
  2. Cut cherry tomatoes in half. Slice ends off cucumbers and dice.
  3. Make dressing with liquids and seasonings.
  4. Mix all ingredients together.
