Since you can’t have fall in Upstate NY without pumpkins, CCE Seneca will be handing out a limited number of pie pumpkins at all three of the Farmers Markets here in Seneca County!

There will also be mini-pumpkin muffins to sample while at the market along with pumpkin recipes and information about the nutritional benefits of orange veggies to take home.

The 4-H program will have fun Fall activities and games for youth with the opportunity to decorate a pumpkin and win prizes, too! 

To help carry your farm fresh produce and other goodies from the market, get a Seneca Recycles reusable shopping bag or backpack with recycling information. Seneca County residents can also take home a recycling blue bin while supplies last.

Recipe

Pumpkin or Winter Squash Chocolate Chip Muffins (full size and/or mini)

Ingredients:

  • 2 cups pureed pumpkin or squash (butternut, etc)
  • 2/3 cup canola oil
  • 3 eggs, beaten
  • 1 cup sugar
  • 1 teaspoons vanilla (optional)
  • 3 cup whole grain all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • 1 Tablespoon pumpkin pie spice
  • 2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup mini dark chocolate chips
  • Optional: ½ cup chopped nuts

Directions:

  1. Preheat oven to 350°
  2. Grease muffin tin or line with muffin liners.
  3. Combine pureed pumpkin (or squash), oil, eggs, sugar and vanilla in a bowl and mix well.
  4. In a separate bowl combine remaining ingredients, except chocolate chips or nuts if using, and mix well.
  5. Add the pumpkin and flour mixtures together and stir with a few quick strokes until blended. Stir in chocolate chips and/or nuts.
  6. Fill muffin tins 2/3 full with the batter.
  7. Bake muffins 20-25 minutes (full size muffins) or ~15 minutes for mini-muffins until when a toothpick inserted in the center of a muffin comes out clean and muffins are slightly browned.
  8. Should make 24 muffins or 48 mini muffins.
